1/2 cup sliced almonds
2 tablespoons peanut oil
2 pounds green beans, stems removed
Salt and pepper to taste
4 tablespoons water
1. In a large flameproof casserole over medium heat, toast the almonds, tossing constantly, for 5 minutes or until they are pale golden. Remove from the pan; set aside
2. Add the peanut oil to the pan. Turn the heat to high heat. Add the green beans, salt, and pepper. Cook, stirring constantly, for 3 minutes.
3. Add the water (take care, the oil will splutter) and cover the pan. Turn the heat to medium and cook the beans, stirring once or twice, for 3 minutes or until they are bright green but tender. Transfer to a platter and sprinkle with almonds.
